Baking against corruption

No time like the kickoff of the Dumptrucks Full of Cash World Cup to reinvigorate a nearly forgotten hobby and its associated blog. Not that the levels of corruption are anything new, but the staggering loss and ruin of human life is a fun plot twist in the evolving saga of HYDRA, sorry I mean FIFA. Perhaps some lighthearted baking can salve the wounds and allow us, as Mr Infantino wants, to focus on the corruption, sorry I mean baking.


Pan de Yuca (Ecuadorian cassava and cheese bread)


2 C + 1T (for dusting) cassava flour

4 C shredded mozzarella cheese

1t salt

1t baking powder

3T ghee (or butter at room temp)

2 large eggs, lightly beaten

1/4 to 1/2 C milk


Preheat to 425. Stir together everything except eggs and milk with hands, dough whisk, fork, spatula, screwdriver, whatever. Beat the eggs into 1/4 cup milk and work into the flour mixture. If its too dry or crumbly splash in milk until it starts to come together. Dump onto the bench and fold. You're not building gluten strands (cassava is gluten free), you're creating a cohesive dough. Once it comes together divide the dough ball into 14-16 relatively even portions. Please feel free to be as anal as your personal demons permit. Lightly knead, then form the portions into balls and place on a baking tray that's either greased or lined with parchment. Bake for 23 minutes. That's right, exactly 23 minutes. Remove, cool and eat. They're best just after baking but they can be reheated. They can also be refrigerated and baked later.
